Jeffrey Paul Knight, age 74, of Roosevelt, died surrounded by family on September 16, 2017 at his home.  
He was born on August 31, 1943 in Provo, Utah, the son of Richard and Gale Stewart Knight. He attended schools in Provo; Mink Creek, Idaho; and Salt Lake City.  
He served an LDS Mission in the British Columbia mission which covered Alaska where he spent most of his time.    
He was married to Janis James and later sealed in the Salt Lake LDS Temple.  They had a son Jay Will Knight. Paul and Jan were later divorced.  He also married Chris Knight, and they had a son Jason and step-daughter, Alana Fagan.  They were later divorced.  
Paul led an adventurous life, living for many years in Alaska, working as a surveyor on the Alaskan Pipeline, a fireman, and in the Alaska National Guard. He loved hunting, fishing  and telling “tall tales.” 
In recent years Paul lived in the Salt Lake City area where he worked as a gardener helping many keep their lawns and gardens groomed.  He then moved to Roosevelt where he developed many close friendships at the Crossroads Senior Center and the Crossroads Villa where he lived.  He was the Chairman for the Roosevelt Senior Advisory Meetings and helped with Alcoholics Anonymous.  He was instrumental in creating a library at the Senior Center, getting all of the shelves and books donated.  He will be missed by family and his good friends at the Senior Center. Special thanks to Stan and Esther Knight for their care and kindness, and to Joyce Kirkham and other health professionals who helped him in his final days.
Paul is survived by sons, Jay Will Knight of Anchorage; AK; Jason Knight, Spokane, WA; step-daughter, Alana Fagan, OH; 6 grandchildren; brothers and sisters, Dick (Ruth) Knight, Logan; Stan (Esther) Knight, Roosevelt; Boyd (Kathy) Knight, West Jordan; Jennie Wightman, St. George; Laura (Mark) Ulrich, Sandy; Kathy (John) Tadje, American Fork; John (Sandy) Knight, Herriman; Dixie (Chris) Schiffman, Salt Lake City; and numerous nieces and nephews.  
A memorial service will be held on Wednesday, September 20, at 12:00 p.m. noon at the Roosevelt 1st and 4th Ward LDS Chapel on State Street and 1st South.  There will be cremation.
